Fluffy little cookies with spicy Chai flavor

1 | cup | granulated sugar | |

1/2 | teaspoon | cardamon | |
|
|||
1/4 | teaspoon | cinnamon | |
|
|||
1/4 | teaspoon | ground cloves | |
|
Beat egg whites with an electric mixer on low until foamy, then at high speed until stiff peaks form. Gradually add sugar while beating at high speed. (When all the sugar has been beaten in, the egg whites will look shiny.) Add the spices and beat just until blended.
Drop the mixture into small mounds on baking sheets that have been covered with foil or parchment paper. Bake at 250 F for 90 minutes. Turn off the oven and let the cookies sit. Don't open the door! Allow them to sit overnight (if possible) or at least until the oven cools. Remove them from the baking sheet and store in an airtight container.
