Yield: 6 servings
2 | pounds | sirloin steak, trimmed
1 | Tablespoon | plus 1/2 teaspoon Cajun seasoning

1 1/4 | cups | red table wine
3 | cloves | garlic, peeled and sliced

1 | Tablespoon | granulated sugar

2 | cups | vegetable oil, for frying
Rub steak with 1 tbsp Cajun seasoning. Place steak in a resealable bag; add red wine and garlic. Marinate at least 4 hours, preferably overnight.
When ready to cook, remove steak, reserving the marinade, and cut into 1- inch cubes. Place steak into individual serving dishes. Sprinkle with chopped parsley.
Strain and pour marinade into small saucepan. Stir in sugar and 1/2 teaspoon Cajun seasoning. Boil marinade for about 10 minutes or until mixture becomes syrupy. Pour into small dishes and use as a dipping sauce.
Heat the oil in fondue pot to 375 degrees F. Spear marinated meat onto the fondue forks and cook 1 to 2 minutes. For best results cook only 4 to 5 pieces of meat at a time.
